This Slow Cooker Chicken Cacciatore recipe is a perfect example of simple cooking with simple preparation!

Finding the right slow cooker

If you want to make cooking simple, one tool that you should have in your kitchen is a slow cooker. This inexpensive small appliance allows you to make simple, delicious meals that are quick to prepare. Slow cookers come in all different sizes, so that is easy to find one that will work perfectly for your family! The smallest available is 1.5 quarts which actually works well for those who are single. The largest slow cookers are 8.5 quarts, which will help you feed a crowd. And for less than $50 you can find a slow cooker of any size that is programmable which makes cooking even easier!

You will want to consider finding a slow cooker that has a removable crock, which is much easier for cleaning!

With this recipe, all you do is cut up a few vegetables and then place all of the ingredients into your slow cooker. Turn it on and let it cook all day! Your house will smell amazing, and the chicken will be nice and tender too.

When looking for canned diced tomatoes and tomato sauce, be sure to look for brands that do not line their cans with BPA, which is a chemical known to cause hormonal problems. A few brands that are now using BPA free cans include: Bionaturae, Cento, EarthPure Organic, Eden Foods (glass jars), Muir Glen, Trader Joes, Wegman’s, Pomi, Whole Foods “365 Everyday Value”.¬†Also be sure that there is no added sugar to either the diced tomatoes or the sauce.

This recipe is naturally gluten free, grain free and Paleo. If you are able to eat dairy, add a bit of grated raw Parmesan cheese for some extra flavor!

Slow Cooker Chicken Cacciatore

This slow cooker meal has quick and easy prep time and will require you to spend very little time in the kitchen. But you family will think you did!

Ingredients

  • 1 lb chicken breasts or thighs-boneless and skinless
  • 1 14.5 oz can of diced tomatoes, organic and no salt added
  • 1 14.5 oz can of tomato sauce, organic and no salt added
  • 1/2 bell pepper, chopped (color does not matter!)
  • 1 small onion, chopped
  • 3-4 cloves garlic, finely chopped
  • 1 cup mushrooms, sliced
  • 1 tsp oregano
  • 1 tsp basil
  • 1/2 tsp unrefined sea salt
  • Zucchini for noodles (Zoodles)

Instructions

  1. Place all ingredients in your slow cooker.
  2. Turn on low.
  3. Cook for 7-8 hours.
  4. Shred chicken in the slow cooker.
  5. Pour over heated zucchini noodles
  6. Enjoy!

Notes

You can steam cook the zucchini noodles before the Chicken Cacciatore is ready, or throw them into the slow cooker with the chicken and sauce about an hour before the end of cooking time!
