All About Kombucha

Kombucha has grown in popularity in the last five years. It has become so common that it is now found in large chain grocery stores, not just health food stores. Fermented beverages such as this have been traditionally consumed for thousands of years, but had been largely forgotten until recently.But this sparkling beverage does much more than just quench your thirst.

We were thrilled to have Hannah Crum, from Kombuchakamp.com on a great call with our own Reed Davis. On this call she talked about some of the amazing benefits of consuming kombucha regularly. Hannah is the founder of Kombuchakamp and is also known as the Kombucha Mamma. She is a master brewer and helps to consult with people who are interested in becoming home and professional brewers.

So, what is kombucha?

Simply put, it is a type of fermented tea. It is tea that has had a starter culture put into it and then is given time to ferment. It starts with a base of sweet tea, to which a scoby is added.  A scoby (symbiotic culture of bacteria and yeast) is the special culture that ferments the tea and turns it into kombucha. The sugar in the tea is a fuel source for the scoby. The yeast and bacteria in the scoby feed on the sugar and begins the fermentation process. Although many people are concerned about the sugar content in kombucha, most is eaten by the culture during the fermentation process. Therefore, kombucha is relatively low in sugar.
